  1. 210g refined or wholemeal spelt flour
  2. 1tsp baking powder
  3. 1tsp bicarbonate of soda
  4. 125g margarine, e.g. pure dairy free Olive
  5. 240g sugar
  6. 3 bananas mashed with a fork (about 300g)
  7. 2 eggs, lightly beaten
  8. 125mls skimmed milk or use semi-skimmed lactose free milk if you need a low lactose diet
  1. Turn the oven to 175°C.
  2. Put all the ingredients into a food processor. Whiz using the pulse button until just smooth.
  3. Pour into the lined tin.
  4. Bake for about 55 minutes or until golden brown and firm on top. Leave in the tin for 10 minutes, then remove and cool the cake on a rack.
  5. Serve plain – it doesn’t need any jazzing up. Perhaps just a cup of tea …
