
Banana and Spelt Quick-Mix Loaf Cake

A very easy-to-make cake. Take a slice as part of your packed lunch?

Ingredients
- 210g refined or wholemeal spelt flour
- 1tsp baking powder
- 1tsp bicarbonate of soda
- 125g margarine, e.g. pure dairy free Olive
- 240g sugar
- 3 bananas mashed with a fork (about 300g)
- 2 eggs, lightly beaten
- 125mls skimmed milk or use semi-skimmed lactose free milk if you need a low lactose diet
Instructions
- Turn the oven to 175°C.
- Put all the ingredients into a food processor. Whiz using the pulse button until just smooth.
- Pour into the lined tin.
- Bake for about 55 minutes or until golden brown and firm on top. Leave in the tin for 10 minutes, then remove and cool the cake on a rack.
- Serve plain – it doesn’t need any jazzing up. Perhaps just a cup of tea …
